Super Healthy Mexican Casserole

This casserole is loaded with nutrients, protein, and, fiber.

Cook 1 cup rice. I use wild rice.
While the rice is cooking saute in olive oil;
1 red bell pepper
1 green bell pepper
1 onion
When tender add to pan
1 can black beans drained
1 can diced tomatoes drained
1 can corn drained
1 to 2 cups salsa
chili powder
cumin
garlic powder
salt and pepper
Tabasco sauce if you like it spicy
rice

put it all in a baking dish and bake on 350 for 30 minutes or until bubbly.

Serve with cheese and sour cream.
